    Eggs in Tomato Shells, baked

    6 large, firm tomatoes
    1 teaspoon salt
    1 teaspoon pepper
    1 teaspoon basil
    6 eggs
    3 teaspoons chopped parsley
    1 teaspoon grated Parmesan cheese
    6 teaspoons melted butter

    Need a 13 x 9 x 2 inch baking dish.
    Heat oven to 350 degrees F.
    Cut tomatoes in half from top to bottom.
    Carefully scoop the pulp from each half, leaving
    a half inch shell.
    Be careful not to cut through.
    Place tomato shells, hollow side up, in a baking dish.
    Mix the salt, pepper, and basil together and sprinkle
    over the tomato shells.
    Carefully break an egg into each shell.
    Mix the parsley and cheese together and sprinkle
    over each egg/tomato.
    Drizzle 1/2 teaspoon of butter over each.
    Bake for 20 - 25 minutes or until the eggs are
    done to your liking.
    Serve with meat of your choice and biscuits.
    Makes 6 servings.
