fresh. It's certainly easier than standing over the stove
making French toast for six people. Put it in the oven and
cut up some fresh fruit to serve on the side.
French Toast Casserole #2
7 cups white, wheat, or cinnamon raison bread,
...cubed into about 1 1/2 inch pieces
1 Tablespoon butter, softened
2 ounces cream cheese
1 1/2 cups milk
4 eggs
1 1/2 teaspoons vanilla extract
1/4 cup powdered confectioners sugar
1/4 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg, optional
Heat oven to 350 degrees F.
Lightly butter a 9 x 9 x 2 inch baking/casserole dish.
Line the bottom of the dish with the bread cubes.
In a large bowl mix the softened butter and the cream
cheese together.
Add the milk and vanilla and stir.
Add the eggs, 1 at a time, while continuing to stir.
When that is done, add 2 Tablespoons of the sugar,
the salt, 1 teaspoon of the cinnamon, and the nutmeg,
if using. Pour this mixture over the bread.
Let the casserole sit for 5 - 10 minutes so the liquid
can soak into the bread.
When that is done, combine remaining sugar and cinnamon
together and sprinkle over the top.
Bake for 45 - 50 minutes or until the top is golden brown.
Makes 5 - 6 servings.
