    Pickled Eggs w/Beets, easy*

    Recipe Introduction

    This recipe says to refrigerate for 2 days, but I've made this and eaten them just a few hours later.

    List of Ingredients

    Pickled Eggs w/Beets, easy*

    1 cup granulated white sugar
    1 cup white vinegar
    2, 15 ounce cans plain cut beets with juice
    2 1/2 dozen small hard boiled eggs

    Place the eggs in a container with a lid. (I
    use a 2 quart container.) Pour in the beets
    and the juice.
    Mix the sugar and vinegar together in a sauce
    pan and heat up on top of the stove, (or in
    the microwave) until the sugar is dissolved.
    This should be quite hot. Pour into the
    containervwith the eggs and beets. Let cool
    down. Refrigerate for 2 days before using.
