Pina Colada Pancakes

pancake mix
1 small can crushed pineapple, well drained
...with juice reserved
water
dried cranberries, (optional)
1 Tbsp. rum extract
dried unsweetened coconut
oil/or butter flavored cooking spray

Spray cast iron skillet with oil or cooking spray and heat until
hot. Mix the amount of pancake mix, the juice from the pineapple
and enough water to make the correct amount of liquid from the
back of the package for the number of pancakes you want to make.
Add the pineappple, cranberries, coconut and rum extract. Cook
pancakes in the hot skillet.
Serve with butter and syrup.

Recipe
