    Pineapple UpSide Down French Toast

    1/2 stick unsalted butter
    1/2 cup firmly packed brown sugar
    1, 15 ounce can crushed pineapple in juice,
    ...well drained, reserve 1/3 cup juice
    3 large eggs
    1 cup milk
    1/2 cup half + half
    1/4 teaspoon salt
    1/4 teaspoon ground cinnamon
    1/4 teaspoon vanilla extract
    8 slices of bread - white , sour dough, your choice

    Lightly grease a 13x9x2 inch baking dish.
    In a saucepan melt butter then stir in sugar until
    dissolved. Add pineapple, stirring well. Spread mixture
    evenly in greased baking dish.
    Place bread slices over pineapple mixture.
    In a bowl, whisk together eggs, milk, half+half, the
    reserved pineapple juice, salt, cinnamon and vanilla.
    Pour egg mixture evenly over bread. Cover with plastic
    wrap and refrigerate overnight.

    Remove from refrigerator 1/2 hour before baking.
    Preheat oven to 400 degrees F. Bake in middle of oven
    for 20 to 25 minutes or until bread is golden.
    Makes 4 servings.
