    quiche - Chicken

    This recipe serves 10-12 when served with a green veggie or salad on the
    side. Halve the ingredients and use 3 eggs instead of the 5 listed, and
    you would have a more manageable-size entree. Cook it in a 9-inch square
    pan if halving. Watch the cooking time, it will be much shorter with a
    smaller dish.

    Quiche, Chicken

    5 eggs
    5 Tbsp real mayonnaise
    1 cup heavy whipping cream, or half-and-half
    4 chicken breasts, cooked, deboned, chopped
    16 oz bacon, cooked and crumbled
    1 cup shredded Cheddar cheese
    1/2 cup chopped onion
    1 (7 oz) can sliced mushrooms, drained
    1 cup raw broccoli florets, chopped
    salt and pepper to taste

    In a large mixing bowl whip eggs. Add mayonnaise, and heavy whipping
    cream and whip. Stir in cheese, broccoli, onion, mushrooms, chicken, and
    bacon. Salt and pepper to taste.
    Pour into a glass 10 x 15-inch baking pan. (The original recipe said no
    need to grease pan, but I lightly coat pan with no-stick cooking spray.)
    Bake at 375*F for 45-60 minutes. Check at 45 minutes to see if it tests
    done in center. Serves 10-12.
