    Strawberry Stuffed French Toast Sandwich

    List of Ingredients

    1 c. milk
    4 eggs
    2 tsp. vanilla extract
    1/4 c. sugar
    2 c. + 1 c. heavy cream, separated
    1 loaf French bread, sliced diagonally
    1 c. freshly cut strawberries
    powdered confectioners sugar for dusting
    1/2 lb. cream cheese, softened

    Recipe

    Combine milk, eggs, vanilla, sugar and 2 cups heavy cream;
    mix well, then set aside.
    Whip the remaining 1 c. of heavy cream until peaks form.
    Beat in the cream cheese until smooth.
    Heat skillet over a medium/high heat and add the butter.
    Dip the bread slices in the batter fast, making sure to leave them long enough to absorb some of the batter without making them soggy. (think dip, dip, fry)
    Place the bread in the skillet and brown on both sides.
    Remove bread to a plate.
    Place a scoop of the cream cheese mixture on top of each piece.
    Top with another piece of French toast to form a sandwich.
    Top with fresh strawberries and dust with the powdered confectioners sugar.
    Serve immediately.
