Swiss Potato Pancakes

List of Ingredients
instant potato flakes,
...use the 1 c. amount from the package
1 1/2 tsp. instant minced onion
1 lb. frozen hash brown potato squares, thawed
1 egg
2 tbsp. flour
1 tsp. baking powder
1 1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. shredded Swiss cheese
applesauce
Recipe
In a large bowl mix the potato flakes and the instant onion.
Prepare the mashed potatoes following the package directions except omit the salt and pepper and substitute boiling water for milk.
Separate the hash brown potato squares.
Blend in with the mashed potatoes and set aside.
Using a small bowl, whisk the egg with the flour, baking powder, salt and pepper.
Stir into the potato mixture.
Brown 1/4 c. at a time in a lightly greased frying pan until golden on both sides, turning once.
Top with the shredded Swiss cheese.
Place a lid on the frying pan to melt the cheese.
Warm the applesauce.
Serve the pancakes with the warm applesauce.
Makes 1 dozen.
