    This is a great way to "dress up" plain waffles. These
    are three of our favorite variations. We use a round
    waffle iron, spreading filling on one side of waffle and
    folding over. If a square or Belgian waffle iron is used,
    fill as you would a sandwich.

    Stuffed Waffles

    basic waffle mix (Yield: 8 waffles)
    3 cups flour
    2 1/2 teaspoons baking powder
    1/4 teaspoons baking soda
    4 tablespoons melted butter
    1/2 teaspoon salt
    4 eggs
    2 cups buttermilk

    Combine all ingredients. Mix until smooth.
    Filling
    12 oz. cream cheese (softened)
    1/2 cup confectioners sugar
    1 teaspoon orange extract
    (Combine above ingredients until smooth.)
    4 peaches, peeled and sliced (Reserve for assembling waffles)

    Prepare basic waffle mix and add 2 teaspoons orange extract
    and 2 teaspoons orange rind.
    Pre-heat waffle iron. Spray with cooking spray. Makes waffles.
    To assemble:
    spread approximately 3 tablespoons of filling on waffle.
    Spread a layer of peach slices over filling and fold waffle over.
    Top with warm Praline Sauce (recipe below).
    Garnish with a dollop of sour cream, peach slices and a sprig of
    fresh mint.

    Praline Sauce
    1/2 cup butter (1 stick)
    2 cups brown sugar
    1 cup whole pecans
    (Heat above ingredients in saucepan until all sugar is dissolved.)

    Filling
    1 medium onion chopped
    2 tablespoons green pepper chopped
    1 lb. bulk sausage (cooked and drained)
    1 cup grated cheddar cheese
    1/2 cup cottage cheese

    Sauté onions and peppers until soft.
    Add remaining ingredients.
    Mix well and set aside.
