    quiche - Bacon, Eggs + Potato Quiche

    3 Tablespoons butter
    2 cups frozen Potatoes O'Brien
    6 eggs
    1/2 cup shredded Pepper Jack cheese
    2 Tablespoons milk
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup shredded Cheddar cheese
    1/2 cup bacon bits

    Melt butter in a microwave safe pie plate.
    Add potatoes and microwave on high for 10 minutes.
    Combine eggs, Pepper Jack cheese, milk, salt and
    pepper; pour over potatoes.
    Bake at 350 degrees F. for 20 minutes or until eggs
    have set.
    Remove from oven.
    Sprinkle with Cheddar cheese and bacon bits.
    Serve immediately.
    Makes 4 to 6 servings.
