    quiche - Zucchini

    1 large chopped onion
    4 slices diced bacon
    3 cups unpeeled, chopped zucchini
    1/2 cup freshly grated Parmesan cheese
    1/2 cup grated Cheddar cheese
    1/4 cup extra light Olive oil
    3 tablespoons dried minced parsley
    salt and pepper to taste
    4 eggs
    1 cup biscuit mix

    Saute the onion and bacon togehter.
    Combine everything together.
    Pour 10 inch pie pan.
    Bake at 350 degrees F for 45 minutes or until golden brown.
    Serve warm or cold.
