    Flounder Thermidor

    List of Ingredients

    4 flounder fillets, (about 1 lb.)

    1 1/2 c. milk

    1/4 tsp. ground black pepper

    3 tbsp. melted butter

    3 tbsp. flour

    1 c. shredded sharp cheddar cheese

    1/4 c. lemon juice

    3/4 tsp. dried parsley

    1 tsp. paprika

    hot cooked rice

    Recipe

    Preheat oven to 350. Lightly grease a 12x8x2" baking dish.

    Cut the fillets in half lengthwise.

    Roll up, and secure with toothpicks.

    Place the filets in the baking dish.

    Pour the milk into the baking dish around the fillets.

    Sprinkle the fillets with the pepper.

    Cover and bake for 30 minutes or until the fish flakes easily when tested with a fork. Remove from oven and drain, but reserve the liquid.

    Place the butter in a heavy saucepan over a low heat.

    Add the flour, stirring until a smooth paste forms.

    Cook for 1 minute, stirring constantly.

    Gradually add the reserved milky liquid.

    Cook over a medium heat, stirring constantly, until the mixture is thickened and bubbly.

    Add the cheese and stir until the cheese is melted.

    Stir in the lemon juice and pour over the baked fillets.

    Sprinkle with parsley and paprika.

    Place under a broiler, 6" away from the heat and cook for 2 - 3 minutes or until lightly browned.

    Serve over hot cooked rice.

    Makes 4 servings.
