    Salmon for Two

    List of Ingredients

    2 skinned salmon fillets, or 8oz. salmon steak
    1 finely minced onion
    1 finely minced clove garlic
    1 tbsp. vegetable oil
    salt
    cayenne pepper (can use regular)
    2 tbsp. butter
    2 bay leaves
    1 tsp. dried parsley or 1 tbsp. freshly chopped
    4 tbsp. dry vermouth
    juice of 1/2 lemon (2 tbsp.)
    1 tbsp. pink peppercorns

    Recipe

    Preheat oven to 500.
    Wash salmon under running cold water and pat dry
    with paper towels.
    Sprinkle the onion and garlic on top of the salmon.
    Oil a shallow baking dish (just large enough to hold the salmon).
    Sprinkle the bottom of the baking dish with salt and pepper.
    Put the salmon in the baking dish and dot with the butter.
    Add the bay leaves, vermouth and parsley.
    Poach for 15 minutes in the oven. Remove from oven.
    Pour the lemon juice over the salmon and sprinkle with the peppercorns.
    Place the salmon on two plates and spoon the remaining juice from the pan over the salmon.

    Serve with new potatoes and creamed spinach or broccoli.
