    Watermelon Habenero Sorbet

    4 c. cut up watermelon, seeds removed
    1 c. sugar
    1/4 c. water
    1/4 c. freshly squeezed lime juice
    1/2 scotch bonnet pepper, finely chopped, seeds removed

    In a food processor, puree the watermelon.
    In a large saucepan, add the sugar, water, and lime juice and
    bring to a boil.
    Cook, stirring until the sugar has melted and syrup has formed.
    Stir in the watermelon and chopped pepper.
    Pour the mixture into a 9" glass baking dish and freeze covered
    for 1 hour.
    Stir the mixture once or twice after that to break up any large
    crystals.

    This is the most delightful mixture of both Hot and Sweet.
    The habaneros or Scotch bonnets are definitely not for the
    faint of heart.
