Apple Gelatin Fruit Squares

cooking spray
3 packets Unflavored gelatin
1 1/2 cups cold water
1, 6 ounce can frozen apple juice concentrate, thawed
1 cup fruit pieces, (chunks of apples, seedless green/red grapes,
...strawberry halves, banana slices, mandarin orange segments)

Coat 2 plastic ice cube trays with cooking spray. Place fruit in
each cube. Using a medium saucepan, sprinkle gelatin over water.
Allow to soften 1 to 2 minutes. Cook over medium heat until gelatin
dissolves, stirring constantly. Stir in concentrate and blend well.
Let cool slightly, then pour into cubes. Refrigerate 1 hour or until
firm. Makes 24 squares.

OR
Spray an 8 inch square pan with the spray.
Let gelatin mix slightly cool and pour in pan.
Place pieces of fruit in pan so that they all
have the gelatin mix between them. Then
refrigerate 1 hour or until firm. Cut into squares
or use cookie cutters for different shapes.
