    High Rise Strawberry Souffle

    2 envelopes unflavored gelatin
    2 1/4 cups water
    1, 10 ounce package frozen strawberries, thawed,
    ...drained and juice reserved
    1, 8 ounce package softened cream cheese
    2/3 cup sugar
    1 tablespoon lemon juice
    1 cup frozen whipped topping, thawed
    red food coloring

    Soften gelatin in 1/2 cup of the water; add remaining water. Stir over
    low heat until dissolved. Combine cream cheese and sugar, mixing
    until well blended. Gradually add gelatin, lemon juice and juice from
    strawberries; mix well. Chill 5 - 10 minutes, or until slightly thickened.
    Fold in strawberries, whipped topping and a few drops of food coloring.
    Pour into a 1 1/2 quart baking dish or wrap 3 inch collars of aluminum
    foil around individual dessert dishes, securing with tape; then pour mixture
    into dishes and chill until firm. Remove foil collars before serving.
    Serves 8 - 10.
