4 boneless pork loin chops, about 1/4 lb. each
2 Tbs. Dijon or stoneground mustard
2 Tbs. lemon juice
2 tsp. dill weed
2 tsp. unsalted butter, melted
Preheat grill machine. Place pork between 2 sheets of wax paper and pound
lightly with a mallet or other heavy flat object to flatten to 1/4 inch
thickness. Combine mustard, lemon juice and dill weed in a bowl. Brush
cutlets on both sides with mustard sauce. Brush butter over both grilling
surfaces. Place pork on hot grill. Close cover and cook 2 minutes until just
cooked through.
