    A "Fried" Ice Cream Dessert

    1 quart vanilla ice cream
    2 1/2 c. coarsely crushed corn flakes cereal
    1 tbsp. melted butter
    2 tbsp. sugar
    1 tsp. ground cinnamon
    non stick cooking spray

    You need a baking sheet that has a rim. Line it with waxed paper.
    Scoop ice cream to make 8 2 1/2" in diameter balls. Place on the lined baking sheet. Place in the freezer for about 1 hour.
    Preheat the oven to 350.
    Meanwhile, coat another rimmed baking sheet with nonstick cooking spray.
    In a medium bowl, combine crushed corn flakes cereal,
    melted butter, sugar and ground cinnamon. Mix well and spread on the baking sheet. Bake for 5 to 7 minutes, or until lightly browned and crisp. Remove to a shallow dish and allow to cool completely.
    Line another rimmed baking sheet with with clean waxed paper. Set aside.
    Remove the ice cream balls from the freezer and roll in the cereal mixture, coating on all sides.
    Place on the clean baking sheet and freeze for 2 to 3 hours, or until the ice cream is firm.
    Serve immediately, or cover and keep frozen until ready to serve.
    Makes 8 servings.
