    Dark Chocolate Ice Cream

    4 ounces unsweetened chocolate
    1 c. milk
    egg substitute to equal 2 eggs
    1 c. sugar
    1 c. heavy cream
    1 tsp. vanilla extract
    1 pinch salt

    Recipe



    Melt the chocolate in a double boiler over hot, but not boiling, water.
    Gradually whisk in the milk and stir until smooth.
    Remove from the heat and let it cool.
    Whisk the egg substitute until light and fluffy.
    Gradually whisk in the sugar. Continue to whisk for 1 minute, until the sugar is completely blended in.
    Add the cream, vanilla, and salt and whisk together.
    Add the cooled chocolate mixture and blend well.
    Cover. Chill, and freeze according to ice cream maker's directions.
    Makes 1 1/2 quarts.
