    Fresh Peach Ice Cream

    Fresh Peach Ice Cream

    1 c. chopped fresh peaches
    1/4 + 1 c. white granulated sugar, separated
    2 tbsp. cornstarch
    1/4 tsp. salt
    2 c. whole milk
    2 large beaten eggs
    1 tbsp. vanilla EXTRACT
    2 c. cream or half + half

    Combine the peaches with the 1/4 c. of sugar and chill.
    Combine the 1 c. of sugar with the cornstarch and salt.
    Blend in the milk gradually.
    Microwave on high (100% power) for 8 minutes or until thick, stirring 2 - 3 times.
    S l o w l y whisk the hot milk mixture into the beaten eggs.
    Microwave on high (100%power), for 2 minutes or until thick and creamy.
    Chill thoroughly; then add the vanilla and cream to the mixture.
    Stir in the chilled peaches.
    Freeze in an ice cream maker, (in batches if necessary), using the manufacturer's directions.
    Makes 1 1/2 - 2 quarts.
