Mexican Ice Cream
3/4 cup sugar
1/2 tablespoon cornstarch
2 teaspoons ground cinnamon (preferably canela)
pinch of salt
2 eggs plus 4 egg yolks
2 1/2 cups whole milk
1/2 cup whipping cream
2 teaspoons brandy
1/2 to 2/3 teaspoon vanilla extract
In a heavy saucepan, stir together the sugar, cornstarch,
canela, or cinnamon, and the salt.
Add the eggs and beat or whisk to combine well.
Pour in the milk and the cream and place the pan over
medium/low heat.
Stir the mixture continuously until it thickens, about
20 minutes, until it coats a spoons thinly.
Stir in the brandy and vanilla and remove from the heat.
Strain through a strainer into a bowl.
Transfer the custard to an ice cream maker and follow
manufacturer's instructions.
Makes about 1 quart.
