Vanilla Bean Ice Cream

7 large egg yolks
3/4 c. white granulated sugar
dash salt
1 vanilla bean
2 c. half + half
1 1/2 c. heavy creamRecipe
Use a large bowl and whisk together the egg yolks with sugar and salt. Set aside.
Split the vanilla bean lengthwise and scrape out the seeds.
Combine the bean halves, the seeds, the half + half and the heavy cream in a large saucepan. Bring just to a simmer.
Gradually, whisk the hot cream mixture into the egg yolk mixture.
Pour the mixture back into the saucepan and cook over a medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon; do Not let it boil.
Strain through a sieve into a large bowl.
Refrigerate until thoroughly chilled.
Freeze in ice cream maker according to manufacturer's directions.
Makes about 1 quart.
