    List of Ingredients




    2 large eggs
    1/2 cup honey
    1/4 cup melted butter, cooled
    1 cup grated carrot
    1 cup chopped walnuts
    1/2 cup raisins
    1/2 cup finely chopped dried apricots
    1/2 cup chopped dates
    1 cup flour
    1 cup regular oats
    1/2 teaspoon baking soda
    3/4 teaspoon ground cinnamon
    3/4 teaspoon ground nutmeg
    1 1/2 cup "O" shaped oat cereal, (cheerio type)

    Recipe



    Preheat oven to 350. Need ungreased baking sheets.
    Beat together eggs, honey and butter until well blended.
    Stir in carrot, nuts and fruits.
    In another bowl, mix together dry the ingredients.
    Add the flour mixture and cereal to the fruit mixture.
    Stir until well mixed.
    Shape the dough into balls about the size of 2 tablespoons.
    Place 1 inch apart on baking sheets.
    Bake for 15 minutes, until firm when lightly pressed.
    Let cool on racks.
    Makes 36 cookies.

    May be served warm, but cool to store in an airtight
    container.
    Refrigerate up to 1 week or freeze to store longer.
