    Lamb - Curried Lamb + Rice

    List of Ingredients

    1/3 cup dried onions
    1/4 cup warm water
    3 tablespoons vegetable oil
    2 tablespoons dried ground coriander
    1 1/2 teaspoons ground cumin
    1 tablespoon ground cardamom
    1 teaspoon ground ginger
    1 teaspoon dried turmeric
    1/2 teaspoon garlic powder
    1/4 teaspoon ground black pepper
    1/8 teaspoon ground red peppers
    2 pounds lamb stew meat, cut into 1 inch cubes
    2 cups beef stock
    1/2 teaspoon or more salt
    1/4 cup plain yogurt
    1 teaspoon fresh lemon juice
    hot cooked rice

    Recipe

    Soak onion in water until soft, approximately 5 minutes.
    Heat oil in a large frying pan over medium/high heat.
    Add onion and saute until golden, about 4 minutes.
    Reduce heat to low.
    Add all spices and stir for 1 minute.
    Add lamb to pan.
    Increase heat to medium/high.
    Cook meat until evenly browned, approximately 10 - 15
    minutes, stirring frequently.
    Add stock and salt.
    Reduce heat to medium.
    Cover and cook for 20 minutes or until the meat is tender.
    Simmer for 20 minutes, uncovered, until sauce thickens.
    Stir in yogurt and lemon juice.
    Serve immediately over cooked rice.
    Makes 6 servings.
