    Lamb - Lamb Cacciatore

    4 pound lamb shoulder or leg,
    ...(trimmed of fat and cut into bite size cubes)
    1/3 cup Olive oil
    1 small minced garlic clove
    1 teaspoon dried ground rosemary
    1/2 tsp. ground sage
    2 teaspoons flour
    1/2 cup white or wine vinegar
    1/2 cup water
    salt and pepper to taste

    In a large, heavy bottomed casserole dish brown the meat in hot olive oil.
    Add the garlic, rosemary and sage and stir.
    Sprinkle flour on and stir. Continue cooking and stirring, to brown the
    flour a little .
    Add the vinegar and water and stir well.
    Cover. Lower heat and simmer for 1 hour or until the meat is tender.
    Stir frequently while cooking. Add a little hot water if necessary to
    prevent
    burning. Season with salt and pepper and serve.
    Makes 4 - 6 servings.
