    Lamb - Lamb + Sun Dried Tomato Parcels

    Serve with green vegetables. You may substitute chicken for the lamb - it is equally delicious.

    List of Ingredients

    1 tablespoon Olive oil
    1 crushed garlic clove
    1 1/2 pounds lamb fillets or lamb backstrap
    2 tablespoons oil packed sun dried tomatoes,
    ...drained and chopped
    1/2 cup chopped feta cheese
    3/4 teaspoon dried basil
    2 tablespoons light sour cream
    4 sheets fillo pastry
    1/3 cup melted butter
    1 teaspoon poppy seeds

    Recipe

    Heat the oil in a heavy frying pan.
    Add the lamb and cook until the lamb is begins to brown.
    Add the garlic but do not allow the garlic to brown as this makes it bitter.
    Remove the lamb and garlic to a bowl. The lamb should be tender when you remove it. Allow this mixture to cool a little.
    Add the tomatoes, feta cheese and basil.
    Stir the sour cream into the mixture.
    Take two sheets of the pastry and layer together with the melted butter.
    Fold in half to form a square.
    Preheat the oven to 375.
    Place half of the lamb mixture in the center of the square.
    Fold the pastry around the filling to form a parcel.
    Repeat with the remaining pastry and lamb filling.
    Place the parcels, seam side down, on a baking sheet.
    Brush with a little melted butter and sprinkle with the poppy seeds.
    Bake, uncovered, for about 10 minutes or until the parcels are browned and heated through.
