    Veal - Veal Roll Ups

    Recipe Introduction

    May be served with mashed potatoes, noodles or with rice and another vegetable or a salad.

    List of Ingredients

    4 veal cutlets
    1/2 teaspoon ground paprika
    2 teaspoons prepared yellow mustard
    1 sweet dill pickle, (1/4'd lengthwise)
    1/2 cup pre packaged liver sausage,
    ...(this can be found in the refrigerated deli
    ...department or ask for it at the freshly cut
    ...deli department in food stores)
    toothpicks
    1/4 cup butter, (1/2 stick)
    2/3 cup plain yogurt
    1/2 teaspoon salt
    1/2 teaspoon ground white pepper

    Recipe

    Pound the veal until it is very thin.

    Dust with the paprika.

    Spread one side of each piece of veal with the mustard.

    Spread 1/4 of the liver sausage on each piece of veal.

    Place a pickle slice on top of the liver sausage.

    Roll the veal pieces up, lengthwise and fasten with a toothpick.

    Melt the butter in a heavy frying pan.

    Brown the roll ups on each side.

    Add the yogurt and season with the salt and pepper.

    Cover and cook over a low heat for 20 minutes.

    Remove the toothpicks before serving and spoon some of the sauce over each roll up.
