    Banana Sour Cream Bars (72)

    1 cup dairy sour cream
    1 1/2 cups granulated white sugar
    1/2 cup butter, softened (1 stick)
    2 eggs
    1 1/2 cups mashed bananas (about 3 large)
    2 teaspoons vanilla
    2 cups all purpose flour
    1 teaspoon salt
    1 teaspoon baking soda
    1/2 cup chopped nuts, optional
    ---
    Heat oven to 375 degrees F.
    Greased and flour a 15 1/2x10 1/2x1 inch jelly roll pan.
    Mix sugar, sour cream, butter and egg in large mixing bowl
    on Low speed, scraping bowl occasionally, 1 minute.
    Beat in bananas and vanilla on Low speed, 30 seconds.
    Beat in flour, salt and baking soda on Medium speed,
    scraping sides. Stir in nuts.
    Spread in jelly roll pan.
    Bake until light brown, approximately 20 to 25 minutes.
    Let cool, then frost with glaze.
    Cut into bars.
    Makes 6 dozen, (72).

    for Vanilla Glaze:
    Mix
    2 cups powdered confectioners sugar
    1/4 cup butter, softened, (1/2 stick)
    1 1/2 teaspoons vanilla
    2 Tablespoons hot water
    Stir in
    1-2 teaspoons additional hot water until smooth and of
    desired consistency.
