    Creamy Bacon Potatoes, ( 50 )

    Sauce:
    14 cups milk
    2 pounds cheese
    9 ounces butter
    2 cups flour
    4 teaspoons salt
    1/2 teaspoon ground black pepper

    24 hard boiled eggs, chopped
    3 pounds diced cooked bacon, optional
    16 pounds cooked potatoes, sliced
    ...(may cook ahead of time. Easiest way is
    ...to peel and boil for about 20 minutes (
    ...until soft but not falling apart. Let cool.
    ...Then slice in 1/2 inch thick slices.
    seasoned breadcrumbs, if desired

    for cheese sauce:
    Melt butter, mixing in flour and stirring to
    form a smooth paste.
    Add milk and bring to the boil, stirring.
    Boil for a short time until sauce thickens.
    Add cheese and stir until fully melted
    (DO NOT BOIL ONCE CHEESE IS ADDED).
    Place sliced cooked potato in bottom of big
    roasting pans.
    Sprinkle bacon on top.
    Spread chopped eggs on top.
    Cover with cheese sauce.
    Sprinkle breadcrumbs on top, if desired.
    Bake at 350 degrees F. for 45 minutes or until
    heated through.

    Serving suggestion:
    This may be used as either a substantial side dish
    or (if you're pushing it) as a main dish. If using as
    a main dish make to serve plenty of salad and bread
    to go along with it and it's a good idea to add a little
    more bacon.
