    Escalloped Corn, ( 100 )

    13 cups whole kernel corn, drained (2, #10 cans/104 to 117 ounces)
    13 cups creamed corn, (2, #10 cans/104 to 117 ounces)
    1/2 pound butter
    4 1/4 cups hot milk
    1/2 cup chopped onion
    2 tsp. salt
    1/2 cup sugar
    2 tsp. ground black pepper
    2 cups crushed crackers

    for topping:
    1/2 pound butter
    1 cup cracker crumbs

    Heat oven to 350 degrees F.
    Mix corn, milk, butter, onions, salt, sugar, pepper and crackers.
    Place in greased steamtable pans.

    Mix butter and 1 cup cracker crumbs.
    Sprinkle over top of corn mixture.
    Bake 25-30 minutes or until topping is browned.
    Makes 100 1/3 cup servings.
