    Meat Balls + Noodles, southern style, ( 50 )

    Meat Balls + Noodles, southern style, ( 50 )

    for the meatballs:
    7 pounds ground beef
    7 eggs, slightly beaten
    1 1/2 cups bread crumbs
    2 Tablespoons salt
    1 1/2 teaspoons ground black pepper
    3/4 cup cooking fat or fat drippings
    4 cups chopped onion
    3 cups chopped celery
    for the sauce:
    5 quarts diced tomatoes
    1 cup granulated white sugar
    2 Tablespoons Worcestershire sauce
    1 1/2 Tablespoons salt
    1/2 teaspoon ground black pepper
    1 teaspoon hot sauce
    for the noodles:
    4 pounds pasta/noodles of choice,
    ...a flat style would probably be best
    1 cup butter
    2 cups sifted flour

    Mix meatball ingredients together and roll into 100 balls.
    Brown on all sides in fat/drippings.
    Add onion and celery and cook until light brown.
    Stir sauce ingredients in. Cover and simmer for 30 minutes.
    Cook pasta al dente to package directions. Drain and keep warm.
    Cream together butter with flour.
    Stir into meat ball mixture and cook until thickened.
    Serve meat ball mixture over noodles.
    Makes 50 servings.
