    Vanilla Fruit Salad, (60)

    5, 20 ounce cans pineapple chunks in juice
    and
    1, 8 ounce can pineapple chunks in juice
    water
    8, 15 ounce cans mandarin oranges, drained
    10 medium peeled and chopped apples
    4, 5.1 ounce packages instant vanilla pudding mix

    Coat 4, 13x9x2 inch pans with cooking spray.
    Drain pineapple juice into bowl and add water to
    make 6 cups of liquid.
    Place pudding mixes in a large bowl.
    Stir in pineapple juice until thickened, about 4 to
    6 minutes. Fold in pineapple, oranges and apples.
    Pour about 8 cups each into the cooking pans.
    Refrigerate.
    Makes 60/64 servings.
