    NoFat - Angel Food Cake

    Fat Free Angel Food Cake

    12 egg whites
    (egg whites whip better at room temperature)
    (also: the tiniest speck of yolk will keep the egg whites from whipping)
    1/2 tsp. salt
    1 1/2 tsp. cream of tartar
    1 c. + 1/2 c. sugar, divided
    1 c. flour
    1/2 tsp. almond extract
    1 1/2 tsp. vanilla extract

    Preheat oven to 375. Use ungreased 10" tube pan or two 8 1/2x4 1/2x2 3/4" loaf pans.
    Beat egg whites and salt until foamy, add cream of tartar and continue to beat until soft peaks form.
    Gradually beat in the extracts and 1 cup of sugar (very s l o w l y !) and continue to beat until stiff peaks form.
    Sift remaining 1/2 c. sugar and flour together. G e n t l y fold flour/sugar mixture into the egg whites.
    Spoon the batter into pan/s. Bake for 30 - 35 minutes.
    To cool, turn cake upside down. If your cake pan doesn't have legs to keep the cake suspended upside down, balance over a couple of cans. Object is to cool the cake suspended. Remove cake from pan when completely cool.
    Makes 1 - 10" Cake or 2 Loaves


    Make sure that your bowls and whipping utensils are grease free. Any amount of grease or oil will prevent the eggs from whipping.
