    Golden Breakfast Cous-Cous

    1 cup + 1 2/3 cups apple juice
    1 cup golden raisins, or
    ...dried cherries, blueberries, cranberries,
    ...apricots, or currants
    1 cup quick cooking cous-cous
    1 cored Granny Smith apple, cut into 1/2 inch chunks
    2 tablespoons minced crystallized ginger

    In a small bowl, place the 1 cup of apple juice and the dried fruit together.
    Cover and let stand at room temperature overnight to plump.

    Pour the 1 2/3 cups apple juice in a medium saucepan and bring to a boil.
    Reduce to a medium heat and stir in the cous-cous.
    Cook for 3 to 5 minutes, until the liquid is absorbed and the cous-cous is
    tender. Remove from the heat.
    Add the plumped fruit, apples, and ginger.
    Stir together well and serve immediately.
    Drizzle with skim milk if desired.
    Makes 4 servings.
