    Recipe Introduction

    This quick cooking dish offers lots of flavor and great versatility. You can serve it over pasta, over spaghetti squash or make a sandwich on crusty bread. It freezes well and can be defrosted in the microwave without losing any of its flavor.

    List of Ingredients

    Lamb Ragout

    1/4 c. olive oil
    2 chopped garlic cloves
    1 tbsp. crushed red pepper
    2 bay leaves
    1/2 lb. coarsely ground lamb
    1/4 c. red wine
    1 16oz. can whole, peeled tomatoes
    2 roasted, julienned red peppers
    1 lb. spinach, washed and roughly torn
    1/4 c. pitted black olives
    1/4 c. toasted pine nuts
    1/2 c. freshly grated Parmesan cheese
    salt and pepper to taste

    Heat a 2 quart skillet until hot.
    Add the olive oil.
    Cook the garlic, crushed pepper and bay leaves together for about 3 minutes.
    Add the ground lamb, stirring until browned, for about 3 - 5 minutes.
    Pour in the wine and continue to cook, for about 3 minutes, to reduce until syrupy.
    Mix in the tomatoes and peppers.
    Bring to a boil.
    Reduce the heat to a simmer and cook for 30 minutes.
    Mix in remaining ingredients and cook an additional 10 minutes.
    Make any corrections to the seasonings and serve.
    Makes 6 servings.
