    LowCarb - Rosemary Chicken, grilled or baked

    4 chicken breasts, halved
    4 tsp. fresh rosemary leaves, minced
    4 cloves garlic, minced
    2 T olive oil
    salt and pepper to taste

    Mix together minced fresh rosemary leaves and minced garlic. Loosen skin
    from chicken breasts and slide rosemary/garlic mixture under the skin. Brush
    olive oil onto breasts and sprinkle with salt (preferably coarse Kosher
    salt) and pepper (preferably fresh ground). The breasts can now be grilled
    over a medium-hot fire for about 30-30 minutes or until done or baked in a
    375 degrees F. oven for about 30 minutes.
    Makes 4 servings.
