    LowFat - Apples Glazed Carrots w/Bacon

    2 bacon slices (rashers)
    1 c. chopped onion
    2 16oz. packages baby carrots
    1 1/2 c. apple cider
    1/4 c. packed brown sugar or use a brown sugar substitute for lower caleries
    1/4 tsp. ground black pepper
    2 tsp. dried chives

    Cook the bacon slices in a small frying pan over a medium heat until crisp.
    Remove the bacon from the pan, and crumble.
    Add the onion to bacon drippings in the pan and saute for 3 minutes.
    Add the carrots, cider, sugar, and pepper, and bring to a boil.
    Cook the mixture 10 minutes over a medium heat or until the carrots are
    tender to your liking.
    Do not drain. Place the carrot mixture in a large serving bowl.
    Sprinkle with the bacon and chives and serve.
    Makes 4 servings.
