    LowFat - Garlicy Chicken Kiev

    3 tablespoons soft reduced calorie butter spread
    1 teaspoon dried chives or parsley
    1/8 teaspoon garlic powder
    cooking spray
    6 boneless skinless chicken breast halves (1 1/2 pounds)
    toothpicks
    2 cups crushed corn flakes cereal,
    2 teaspoons dried parsley
    1/2 teaspoon paprika
    1/4 cup low fat buttermilk or fat free (skim) milk

    Mix the spread, chives and garlic powder together.
    Shape into a 3x2 inch rectangle on a plate or dish.
    Cover and freeze for about 30 minutes or until firm.
    Heat oven to 425 degrees F.
    Coat a 9x9x2 inch square baking pan with the cooking spray.
    Place the chicken between sheets of wax paper or
    plastic wrap. Pound each piec to 1/4 inch thickness.
    Remove spread mixture from refrigerator and cut
    into 6 pieces. Place 1 piece on center of each piece
    of chicken.
    Fold long sides of chicken over spread. Fold up ends
    and secure with toothpick.
    Mix cereal, parsley and paprikatogether.
    Dip chicken into buttermilk, then coat lightly and evenly
    with cereal mix.
    Place chicken, seam sides down, in pan.
    Bake, uncovered, for 35 minutes or until chicken is no
    longer pink in center.
    Makes 6 servings.
