    LowFat - Turkey Tenderloins w/Tomatoes

    4 Turkey breast tenderloin steaks
    1/8 teaspoon salt, optional
    cooking spray
    1 sliced shallot
    1 minced garlic clove
    4 thin tomato slices
    1 teaspoon dried crushed basil
    1/2 cup shredded reduced fat Mozzarella cheese

    Rinse turkey, pat dry with paper towels. Sprinkle turkey with salt.
    Coat large frying pan with cooking spray. Heat over medium heat.
    Add turkey, shallot, and garlic.
    Cook for 3 - 4 minutes, turn and cook 3 - 4 more minues, or until
    turkey is no longer pink.
    Place a slice of tomato on each piece of turkey in the pan.
    Sprinkle basil and shredded cheese over top.
    Cover and heat about 2 minutes more or until cheese melts.
    Makes 4 servings.
