    LowFat - Baked French Toast w/syrup

    List of Ingredients

    Baked French Toast w/syrup

    for the toast part:
    12 slices white day old bread, cut into 1" cubes
    1 8oz. pkg. light cream cheese, cut into 1" cubes
    1 c. dried cranberries or blueberries or other fruit
    egg substitute equivalent to 12 eggs
    2 c. skim milk
    1/3 c. lowfat maple syrup*
    non stick cooking spray

    *for the syrup:
    1 c. Splenda sugar substitute
    2 tbsp. cornstarch, (make sure is not lumpy)
    1 c. water
    1 c. cranberries or whatever fruit used above

    for the toast part:
    Coat a 13x9x2" baking dish with cooking spray.
    Place half of the bread cubes in baking dish.
    Place cream cheese cubes over bread.
    Top with dried cranberries and remaining bread.
    In a large bowl, combine egg substitute, milk and maple syrup. Mix well and pour over bread mixture.
    Cover and chill 8 hours or overnight.
    Preheat oven to 350.
    Remove from refrigerator 30 minutes before baking.
    Cover and bake for 30 minutes.
    Uncover and bake 25 - 30 minutes longer or until golden brown and the center is set.

    *for the syrup:
    Stir sugar and cornstarch together in a saucepan.
    Add the water and stir until it is well combined.
    Bring to a boil over a medium heat and boil for about 3 minutes stirring constantly.
    Stir in cranberries and reduce heat.
    Simmer for 8 - 10 minutes.

    Makes 8 servings.
