    LowCarb - Mushroom Pate

    Recipe Introduction

    This vegetarian pate is good served on crackers, crusty bread or even on raw vegetables.

    List of Ingredients

    Mushroom Pate

    4 tbsp. butter
    1 c. finely chopped fresh mushrooms
    1/4 c. finely chopped shallots
    1/4 c. white wine
    1/4 c. vegetable stock
    2 minced scallions, white and green parts
    1 8oz. pkg. cream cheese, room temperature
    salt and pepper to taste

    Melt the butter in a large skillet.
    Saute the mushrooms and shallots for 3 - 5 minutes, until tender.
    Add the wine and vegetable stock and simmer until the liquid has been absorbed.
    Remove from the heat and transfer to a bowl.
    Add the cream cheese, salt, pepper, and minced scallion and mix thoroughly.
    Serve warm or chilled.
    Serves 6 - 8 appetizer servings.
