    LowCarb - Pan Fried Lamb Chops

    Recipe Introduction

    The method described here works well for chops up to 1" thick. If yours are thicker, stir in a little wine, water or broth after the initial browning of the chops, cover, and cook to the desired degree of doneness.

    List of Ingredients

    Pan Fried Lamb Chops

    4 8oz. lamb chops, trimmed of all fat and blotted with a paper towel
    4 crushed garlic cloves
    salt and freshly ground pepper to taste
    4 tsp. vegetable oil
    4 lemon wedges

    Rub both sides the chops with the garlic and sprinkle with salt and pepper.
    Heat the vegetable oil in a large heavy non stick pan.
    Brown the chops on both sides, approximately 1 minute per side.
    Lower the heat to medium and cook for 4 minutes, each side, longer for medium/rare chops.
    Deduct a minute for rare chops, add a minute or two for well done.
    Squeeze the lemon over the chops just before eating.
    Makes 4 servings.
