    LowFat - Southern Fried Chicken

    List of Ingredients

    Southern Fried Chicken

    3 boneless, skinless chicken breasts, (18 oz.)
    2 c. low fat buttermilk
    1/2 c. crushed cornflakes
    1/2 c. flour
    1/4 tsp. salt
    1 tsp. pepper
    3 tbsp. canola oil

    Soak the chicken in the buttermilk for 4 - 24 hours in the refrigerator.
    Combine the cornflakes, flour, salt and pepper in a medium bowl.
    Discard the buttermilk.
    Dredge the chicken in the mixture until completely coated.
    Refrigerate for 30 minutes. (This helps the coating to stay on.)
    Heat the oil in a large non stick frying pan.
    Fry the chicken for 20 - 25 minutes, turning once.
    Drain on paper towels before serving.
    Makes 3 servings.
