    Beef + Ham Stuffed Zucchini with Tomato Sauce


    6 medium zucchini
    1/3 c. olive oil
    1/2 c. minced fresh onion
    1 medium minced or finely grated raw carrot
    2 freshly minced garlic cloves
    1/2 lb. lean ground beef
    1/4 c. ground ham
    1 beaten egg
    2/3 c. fine bread crumbs
    2/3 c. + 1 1/2 tbsp. freshly grated Parmesan cheese
    salt and pepper to taste
    1 tsp. dried oregano
    1 1/2 c. tomato sauce, (12oz.)

    Wash and dry the zucchini.
    Cut in half lengthwise. Hollow out centers carefully, leaving the shells 1/4" thick. Reserve the pulp.
    Preheat oven to 350. Need a baking dish large enough to hold the zucchini shells.
    Heat the olive oil in a large skillet and saute the onion, carrot and garlic until limp. Coarsely chop the zucchini pulp and add to the sauteed mixture. Cook for about 4 - 5 minutes.
    Put the vegetable mixture into a bowl and set aside.
    Cook the ground beef in the same skillet until it loses its pink color.
    Add the ham and vegetable mixture and combine well.
    Add the egg, bread crumbs, the 1 1/2 tbsp. of the Parmesan cheese, salt, pepper, and oregano and mix well.
    Now stuff the zucchini shells with the meat/vegetable mixture, mounding on the top.
    Pour the tomato sauce in the bottom of the baking dish.
    Place the stuffed zucchini in the sauce and sprinkle the tops with the remaining 2/3 c. Parmesan cheese.
    Cover tightly with foil and bake for 30 - 40 minutes, or until tender.
    Uncover during last 10 minutes of baking time to brown tops.
    Makes 6 servings.
