1pound country sausage, split halfway open lengthwise
1pound round steak, cut into thin 2-inch strips
1cup diced onion, 1-inch dice
3/4cup diced green bell pepper, 1-inch dice
8ounces fresh mushrooms, trimmed and sliced
1/2cup sliced olives
3cloves garlic, peeled and minced
1 1/2teaspoons crushed dried parsley
1teaspoon Italian herbs
1teaspoon salt
1/2teaspoon crushed red pepper
1can 15-oz. tomato sauce
1can 14.5-oz. diced tomatoes, undrained
6long sandwich rolls
1 1/2cups shredded mozzarella cheese
In a large skillet over medium heat, brown sausages and steak until no pink is showing on sausage; drain thoroughly. Add onion, green pepper, mushrooms, olives, garlic, parsley, Italian herbs, salt, crushed red pepper, tomato sauce and diced tomatoes in their juice; stir to mix and simmer, stirring occasionally, for 1 hour.
Preheat broiler. Split the rolls and lightly toast under the broiler. Top bottom halves with meat filling and sprinkle with shredded cheese. Place under preheated broiler long enough to melt cheese, 1 to 2 minutes.
