    Banana Muffins #2

    Recipe Introduction

    These stay moist and fresh quite a long time.

    List of Ingredients

    Banana Muffins #2

    1/2 cup butter flavored shortening
    1 cup granulated white sugar
    2 eggs
    1 cup mashed ripe bananas (2 or 3 bananas)
    1 1/2 cups sifted flour
    1 teaspoon nutmeg, optional
    1 teaspoon baking soda
    2 teaspoons hot water
    1 teaspoon vanilla

    Preheat oven to 350 degrees F.
    Grease or use paper liners in a muffin pan.
    Cream the shortening and sugar together.
    Add the eggs and bananas and mix well.
    Stir in the flour and nutmeg.
    Dissolve the baking soda in the hot water and add to the banana mixture.
    Stir in the vanilla.
    Fill the muffin cups about half full.
    Bake for about 20 minutes, or until golden brown.
    Makes 24 medium muffins.
