    Graham Cracker Muffins

    List of Ingredients

    2 1/2 c. graham cracker crumbs
    1/4 c. white granulated sugar
    2 tsp. baking powder
    1 c. milk, can use low fat, if desired
    1 slightly beaten egg
    2 tbsp. honey

    Recipe

    Preheat oven to 400. (If using dark pans, decrease temperature by 25 degrees.)
    Grease or paper line 10 muffin cups in a muffin pan. Fill the others 2/3 full with water.
    Combine the graham crumbs, sugar and baking powder together in a large bowl.
    Stir in the milk, egg and honey, mixing just until moistened.
    Pour the batter into the muffin cups.
    Bake for 15 - 18 minutes, or until a tester comes out clean.
    Let set for 5 minutes, then move to a wire rack to cool completely.
    Makes 10 servings.
