    Maple Wheat Muffins

    Recipe Introduction

    The moistness of apples makes up for the oil usually found in muffins. These treats are best eaten fresh.

    List of Ingredients

    3/4 c. whole wheat flour
    1/2 c. flour
    2/3 c. wheat bran
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. ground cinnamon
    pinch salt
    1/3 c. raisins or chopped dates
    1 beaten egg
    1 c. skim milk
    1 c. grated peeled apple
    1/4 c. maple syrup
    1 tbsp. applesauce oil
    1 tbsp. grated orange rind

    Recipe

    Preheat oven to 375. Coat a muffin pan with cooking spray.
    Use a large bowl to combine wheat and regular flours,
    1/2 c. of the wheat bran, baking powder, baking soda,
    cinnamon and salt.
    Stir in dates.
    Use a separate bowl to mix egg milk, apple, syrup,
    applesauce and orange rind.
    Pour over the flour mixture and stir just until moistened.
    Spoon batter into the 12 muffin cups.
    Sprinkle with the remaining bran.
    Bake for about 25 minutes or until firm to the touch.
    Makes 12 muffins.
