    Recipe Introduction

    This recipe came from a woman that makes muffins for a living. They will rise up rather large! You can decrease the amount of baking powder if you desire, or just make more than this recipe calls for.

    List of Ingredients

    Pineapple Coconut Muffins

    3/4 cup butter
    1 cup milk
    2 lightly beaten eggs
    1, 13/14 ounce can crushed pineapple, undrained
    3/4 cup sugar
    3 cups flour
    6 level teaspoons baking powder
    1/4 teaspoon salt
    1 cup shredded coconut

    Preheat oven to 350 degrees F.
    Grease and flour pans.
    Melt butter.
    Blend in milk, eggs and pineapple.
    Combine sugar, flour, baking powder, salt and coconut.
    Add to wet mixture until just combined.
    If the mixture is too dry, add another 1/4 cup milk.
    Spoon into muffin cups.
    Sprinkle tops with a little granulated white sugar.
    Bake for about 20 minutes, or until golden brown.

    These bake up large. Experiment with how much you put
    into the muffin cups to see what size you want as the
    finished size, and make note of it for future use.
