    Spinach + Onion Muffins

    2 onions, diced 1/4 inch
    1 bunch spinach, washed and spun dry
    1 teaspoon Olive oil
    2 1/2 cups cake flour
    1/4 cup granulated white sugar
    1 Tablespoon baking powder
    2 teaspoons salt
    2 eggs
    3/4 cup milk
    2/3 cup vegetable oil
    1/2 cup grated Parmesan cheese for top

    Heat a suitable pan over medium high heat and add the olive oil.
    Add the onions and cook slowly until caramelized.
    Remove to a baking pan to cool.
    Add the spinach to the pan and cook over high heat
    until the leaves become completely wilted.
    Remove to a baking pan to cool.
    When cool, chop finely. Reserve.
    Heat oven to 425 degrees F.
    Butter muffin tins.
    Combine the 4 dry ingredients in a bowl and mix well.
    Add the eggs, milk and vegetable oil to the dry ingredients
    along with the cooled onions and spinach.
    Mix together until just combined. Do not over mix.
    Scoop the batter into tins, filling 2/3's of the way to
    the top.
    Sprinkle the tops with Parmesan cheese.
    Bake for about 15 minutes.
    Remove from the oven and remove the muffins.
